My son has been obsessed with numerous superheros for his short life…but Baymax takes the cake. He talks about Baymax constantly and when I hear him making “woosh” and explosion sounds, I know he’s playing Big Hero 6. So, OF COURSE I had to throw him a Baymax party, complete with Big Hero 6 Dessert Sushi Rolls, and a Baymax cake and cookies. It was a huge success! I have literally never seen a happier kid.
I love the way the dessert sushi rolls turned out. They were so yummy and much healthier than most party treats. I filled them with chocolate spread, coconut, fruits and marshmallows. I did 3 different combinations, but the possibilities are endless and they’re SOOOO easy to make.
I also topped them off with my cute Baymax printables.

Big Hero 6 Dessert Sushi Rolls
Ingredients
- white or wheat bread slices
- hazelnut chocolate or peanut butter spread
- sweetened shredded coconut
- bananas
- strawberries
- marshmallows
Instructions
- Flatten the white bread one at a time with a rolling pin. Make it as flat as possible.
- Cut off the edges of the bread, then cut it into 3 even pieces.
- Spread peanut butter or chocolate on the bread pieces. Be as liberal as you like with it!
- Add coconut, if desired, then top with the fruit of your choice. Make sure you leave a space on the edge (like the image above).
- Roll over and attach the ends together (overlapping a little bit).

We ate our hearts out, then opened what Max believes are the best presents ever.

I loved that I got to throw Max the party of his dreams. Even though I didn’t go all out like most of my parties, he was SOOOO happy. That’s my favorite thing about this guy. He has the most genuine smile in the world and I’m so grateful I get to be his mom!
