My husband and I try to go out on a date every other week or so. We sound so boring because our favorite thing really is to eat dinner and a go to a movie. We usually try something new every date, but we recently found this AMAZING barbecue place and we have already been there twice. The ribs are just heavenly! I’ve never been a huge fan of coleslaw, but their pecan slaw is to die for. I decided to make a similar at-home recipe so I could enjoy it at our next picnic!

I hope this recipe will hold you over for a bit, because my refrigerator is broken and my warranty company is not fixing it. I won’t name names, but my 3-year-old refrigerator (which has been repaired before) comes from a company that rhymes with Smirlpool, and my warranty company rhymes with Tears (which is fitting because I’ve shed many).

Apple Pecan Coleslaw

Ingredients

1 package 14 ounces coleslaw mix
2 red delicious apples finely diced
1 1/4 cup mayonnaise
1/4 cup sugar
3 tsp. apple cider vinegar
1/8 tsp salt
1/2 c. chopped pecans

Instructions

Combine coleslaw mix and apples in a large bowl.
Combine mayo, sugar, apple cider vinegar and salt in a medium bowl, then add to coleslaw mixture.
Stir until combined, then stir in pecans.
Refrigerate for an hour, then serve.
