My husband and I try to go out on a date every other week or so. We sound so boring because our favorite thing really is to eat dinner and a go to a movie. We usually try something new every date, but we recently found this AMAZING barbecue place and we have already been there twice. The ribs are just heavenly! I’ve never been a huge fan of coleslaw, but their pecan slaw is to die for. I decided to make a similar at-home recipe so I could enjoy it at our next picnic!
I hope this recipe will hold you over for a bit, because my refrigerator is broken and my warranty company is not fixing it. I won’t name names, but my 3-year-old refrigerator (which has been repaired before) comes from a company that rhymes with Smirlpool, and my warranty company rhymes with Tears (which is fitting because I’ve shed many).
Okay, done being catty…onto this delicious Apple Pecan Coleslaw Recipe! (but seriously, if you know anyone that can pull some strings for me with those companies…)
Apple Pecan Coleslaw
Ingredients
- 1 package 14 ounces coleslaw mix
- 2 red delicious apples finely diced
- 1 1/4 cup mayonnaise
- 1/4 cup sugar
- 3 tsp. apple cider vinegar
- 1/8 tsp salt
- 1/2 c. chopped pecans
Instructions
- Combine coleslaw mix and apples in a large bowl.
- Combine mayo, sugar, apple cider vinegar and salt in a medium bowl, then add to coleslaw mixture.
- Stir until combined, then stir in pecans.
- Refrigerate for an hour, then serve.
