Preheat oven to 350 degrees Fahrenheit.
Cream sugar, shortening, eggs and flavoring in a stand mixer.
In a small bowl, make a paste of the cocoa and red food coloring, then add to stand mixer.
Alternately add flour and buttermilk to the mixture.
Mix soda and vinegar in a small bowl, then add to batter. Blend well.
Bake for 8 to 10 minutes, then let cool.
