Preheat oven to 325 degrees Fahrenheit.

In a mixing bowl, combine white cake mix, soda and egg white.

Pour mix about 1/2 the way in the cupcake liners.

Add sprinkles. I used about 1 tsp. for each cupcake.

Mix in food coloring of choice until it is the desired color.

Fill cupcake liners to 3/4 of the way full.

Bake according to cake mix instructions.

Let the cupcakes cool, then top with buttercream frosting.

Top with Skittles Sprinkles and serve.
