Italian Chicken Salad in a Jar

Ingredients

For the Dressing

  • 1/2 c. Zesty Italian Dressing
  • 3 Tbs. Yellow Mustard BBQ Sauce
  • 1 Tbs. Balsamic Vinegar

For the jars

  • 1 1/2 c. Rotisserie Chicken
  • 1/4 c. Roasted Red Peppers diced
  • 2 Tomatoes diced
  • 1 Bell Pepper
  • 2 Carrots shredded
  • 1/3 c. Sunflower Seeds
  • 1/3 c. Grated Parmesan Cheese
  • 6 Basil leafs minced
  • 4-6 c. Spinach

Instructions

  • Prepare dressing in a small bowl by mixing all the dressing ingredients.
  • Distribute dressing into 6 clean mason jars.
  • Evenly distribute the rest of the ingredients in this order: Roasted Red Peppers, Chicken, Tomatoes, Bell Peppers, Carrots, Sunflower Seeds, Parmesan, Basil and Spinach
  • Cover the jar with a lid and refrigerate.

Notes

*With the chicken, these can be stored up to 3 days. Without, up to a week. A great option is to leave the chicken out and add it on top.
