Orange Fanta Poke Cake

Ingredients

For the Cake

  • White cake mix
  • 1 1/2 c Orange Fanta
  • 1 egg white

For the Gelatin Topping

  • 1 pkg 3 oz orange gelatin
  • 1 c boiling water
  • 1/2 c Orange Fanta chilled

For the Whipped Topping

  • 2 c whipped cream
  • 3-5 Tbs. sugar

Instructions

For the Cake

  • Mix all cake ingredients in a mixer.
  • Bake according to box instructions in a 9X12 pan.
  • Once cake is done baking, let cool for 15 minutes, then poke holes in the cake using a large fork (about ever 1/2 inch).

For the Gelatin topping

  • While cake is cooling, boil 1 c water.
  • Pour gelatin into a medium bowl.
  • Pour boiling water over gelatin powder and whisk for 2 minutes until gelatin is dissolved.
  • Pour chilled Orange Fanta into the gelatin mixture and stir until dissolved.
  • Pour the gelatin mixture over the cake, then refrigerate for about 3 hours.

For the Whipped Topping

  • Once cake is almost done chilling, pour whipped cream into a mixing bowl (I use a KitchenAid with the wire whisk).
  • Whip until it starts forming peaks, for about 2-3 minutes. It needs to be stiff, but don't wait too long or it will turn to butter.
  • Once it's thickened, add sugar and whip until combined.
  • Smooth over the chilled cake and serve!
