Mix together dry ingredients in a medium bowl (flour, sugar, baking powder, cinnamon, nutmeg and salt).
In another medium bowl, beat eggs slightly, then stir in milk, applesauce and vanilla.
Add egg mixture to the dry mixture and stir until just moistened (it is okay for it to be slightly lumpy-you do not want to over mix waffles!)
Pour waffle mixture into a lightly greased and heated waffle iron. Follow your instruction manual for the time and amount of batter needed.
