Had enough pumpkin recipes this year? Yeah, me neither. One of my very favorite treats is pumpkin ice cream and I’m taking it up a notch with this Pumpkin Caramel Pecan Swirl Sundae. It’s decadent, flavorful, and my new favorite dessert!
The best part about this recipe is that you don’t have to make the ice cream. I used Dreyer’s Slow Churned Pumpkin Patch ice cream. It is light and fluffy and tastes like homemade! You can find it at Walmart along with other slow churned flavors. I also used Libby’s Pumpkin Puree to mix into the sundae to give it even more pumpkin flavor. Pumpkin Caramel Pecan Sundae
Ingredients
- 1 tsp melted butter
- 1/4 c chopped pecans
- salt to taste
- 1/2 c Libby's Pumpkin Puree
- 2 Tbs. caramel syrup
- Dreyer's Pumpkin Patch Slow Churned Ice Cream
Instructions
- Mix melted butter, pecans and salt in a small bowl.
- Add it to the pumpkin puree, then add caramel syrup.
- Layer pumpkin ice cream, puree mixture and caramel until your bowl is full!
It is still hot here in Arizona. I’m also 30 weeks pregnant, so I’m ridiculously uncomfortable. It’s a lot easier for me to make a pumpkin sundae than a pumpkin pie at this point. I get to cool off instead of heating up the oven. It’s heavenly, really!
