My mom was coming to visit for the Mother’s Day Tea Party. I love and adore my mom, so I wanted to make my part in the party extra special! I enlisted the help of my sweet neighbor and talented sister-in-law to assist me in making the gum paste flowers. They were fun to create even with lots of kid distractions. That’s part of being a Mom, right?! Thank you girls! Besides the flowers these yummy cupcakes certainly impressed my mom. When we ate them at the party, we were either saying, “These are amazing!” or “Mmmmm!” Now onto the Coconut Lemon Curd Cupcake Deliciousness…
Choose your favorite white cake box mix. When mixing ingredients add 1 1/2 to 2 tsp coconut extract. Follow cupcake baking directions. Easy peasy!
When cupcakes have cooled add the Lemon Curd Recipe from Joy of Baking. Snip the corner of a plastic bag and put Wiltons 230 tip inside, letting end poke out. Add lemon curd. Insert tip halfway into cupcake and squeeze gently counting to 4. The counting helped me distribute the same amount of curd into each cupcake. Now you are left with an unattractive hole in the top of your cupcake. Lets cover that up with some frosting…
Coconut Buttercream Frosting Recipe:
- 1/2 cup softened butter
- 1/2 cup shortening
- 2 tsp coconut extract
- 2 lbs powdered sugar (approx. 8 cups)
- 1/2 cup milk
- Coconut flakes
Cream softened butter and shortening. Add coconut extract (if you are afraid the coconut flavor will be too strong or not strong enough, add 1/4 tsp at a time, but 2 tsp were perfect for my taste buds). Alternate powdered sugar and milk, adding sugar 1 cup at a time. When combined, turn the mixer on medium high, and let mix 3-5 min. This will create a creamy, fluffy texture.
Decorate cupcakes using tip 2D to enhance the feminine theme. Place tip on the outside edge of cupcake and circulate inward. Sprinkle with coconut flakes. To top it off and add a splash of color, add the Mother’s Day Printables and some gum paste flowers.
These cupcakes turned out lovely, but the taste was divine. They were the perfect cupcake for the occasion. Try them out and tell me what you think. Happy Mother’s Day!
