Cracker pudding is a staple in my family. My mom makes it for almost every family gathering and she has to make AT LEAST 4 batches. At least. Because if she doesn’t, there would be an uprising and the possibility of a murder. I’m not saying we’re crazy (okay, maybe a little)…but cracker pudding is the bomb! Traditionally, it has coconut in it…but I decided to make it fall appropriate and Pumpkin Apple Cracker Pudding was born. You can’t really get any more fall flavored than that…amIright?
So, this Pumpkin Apple Cracker Pudding is amazing and incredibly easy to make. It tastes yummy hot but it’s also delicious cold! I know…such a versatile treat.

- Mix in the cracker crumbs; bring to boil, reduce heat to low, and simmer the mixture until thick, about 5 minutes.

- In a medium non-stick pan, melt butter.
- Add apples, brown sugar, cinnamon, cloves and nutmeg to the pan.

And can I brag a little bit about my new table? I’m in love. I love the way it looks in my kitchen nook, but the way it looks in pictures?? I’m dying! This might be the push I need to get a DSLR camera…too bad I spent all my money on a table. Oh well, it was worth it. I grew up with a round table and I just really like the way they look and I like how cozy everyone is…it’s perfect for our little (growing) family!
I need to put some artwork up too. As an artist, I am the most indecisive when it comes to my own decor. In my 8 years of marriage, I have put up 1 piece of art. It’s ridiculous and something I need to remedy because that gray wall needs some color! Anyway, back to the pudding…Yum.
Yum. Yum. Yum. That is all.

Would this work without the crackers? Or at least with a gluten free cracker/cookie crumb or even bread crumbs?
Erin says
Hi Brigitte- the crackers are necessary for the consistency of the pudding. I’m not sure how the gluten free crackers would work since I’ve never purchased them, but I don’t think bread crumbs would work either (I think it’d just be soggy…no bueno!) If you try the gluten free crackers, let me know how it worked for you!

Erin, are you telling me that you didn’t take these photos with a DSLR? What are you using and how do get such nice pictures? I just have a point and shoot right now and need to figure out how to use it better. ~Marily

Hi Marily! I am using a Sony NEX-3. I’m not sure if sony makes them anymore, but Samsung has one like it. It was about $500..so not cheap, but not super pricey either. I really like it, but it has its limits. The best thing you can do is find a spot that has great natural light!

OK, this sounds yummy, but you’ve got to promise me that the crackers won’t turn soggy, otherwise there will be a rebellion at my house! Hub won’t do soggy. Promise it’s good?

LOl…it’s not like eating a soggy cracker in soup 😉 It just makes it really thick and a little salty. This is SOOOO good…seriously one of my favorite desserts ever!

You have coconut in your directions but not in your ingredients.
How much coconut ???
Erin says
Sorry, Barbara…that was an error that I needed to fix. My usual cracker pudding recipe has coconut, but this one does not!
