I’m a bit obsessed with creating salads from leftover Turkey. I just always need something light after Thanksgiving and a salad is the perfect meal after eating all those carbs! My Leftover Turkey Pear Waldorf Salad is fruity and nutty and oh so tasty! This has all the traditional Waldorf salad ingredients like mayo, apples and walnuts, with pears and a hint of raspberry flavor. It tastes amazing over some fresh greens or in a sandwich. Using all that leftover turkey is a great way to save some cash this holiday season, too!
- 2 to 2 1/2 c. diced leftover turkey
- 1/4 c. diced celery
- 1 pear, diced
- 1 apple, diced
- 1 c. grapes, halved
- 1/2 c. Kraft Mayo
- 1/2 c. vanilla yogurt
- 1 Tb. sugar
- 2 Tbs. Kraft raspberry vinaigrette dressing
- 1/2 c. chopped Walnuts
- salt and pepper, to taste
- Combine turkey and fruit in a large bowl.
- In a smaller bowl, stir together mayo, yogurt, sugar and raspberry dressing.
- Pour sauce over turkey and fruit and stir until everything is coated.
- Add walnuts and salt and pepper to the bowl and stir.
I feel like this salad is a good in between meal. We stuff ourselves for Thanksgiving and then do it again a month later for Christmas. I’m hoping I can keep a good diet in between that time! If you don’t have any leftover turkey, go ahead and use grilled chicken breast instead.
I used Kraft Mayo for my salad. For me, the brand of mayonnaise makes all the difference. I put mayo on everything, but I only use Kraft! I love their olive oil mayonnaise too. To make this sandwich extra yummy, I used my cranberry raspberry sauce as a spread! I just set some cranberry raspberry sauce aside before adding the gelatin in my Cranberry Apple Raspberry Jello. What do you plan to do with your Thanksgiving leftovers? Or will there be anything leftover? 😉
