Today was my oldest baby’s first day of school. Excuse me while I sob into her little tiny pillow. All kidding (kind of ) aside, I’m excited for her. She LOVED preschool and I’m hoping she’ll enjoy her time as a Kindergartner this year. I’m trying to make this transition as easy as possible for her, her little brother and me, so of course the first thing I think of is FOOD! That’s why I came up with some EASY after school snack recipes with Bagel Bites and Delimex. These items are great on their own, but with my Bagel Bite Bar and homemade salsa and guacamole, they’re AMAZING!
My daughter stopped taking naps and she gets pretty cranky and hungry around 2:00-right when school gets out. So, if I don’t have something ready for her when she gets home, I’ll be in BIG TROUBLE! These are perfect for after school because the serving sizes are small. It’s something that can hold her over without ruining dinner.
For the Bagel Bite Bar, I bought cheese Bagel Bites and served them with ham, pineapple, turkey and bacon (and extra cheese so the toppings would stay put). I let the kids choose the toppings they wanted, then baked them for 10-12 minutes at 400 degrees. My favorite was the Hawaiian pizza combo, which I usually don’t like. I’m pregnant…that could explain my change in taste. Bagel bites are great option for a quick after school snack and they’re made with real cheese and homemade sauce with 0g trans fat.
I served my home made salsa and guacamole with the Delimex Corn Taquitos. You simply can not eat a taquito without guacamole…it’s impossible. I am always disappointed in guacamole at restaurants because mine is sooo good! Nothing beats it and it’s so easy to make. Also, did you Delimex sells dessert taquitos too? I had to grab some of those. These were the bomb served with a simple fruit dip!
Homemade Salsa and Guacamole
Ingredients
For the Salsa
- 1 14 oz. can diced tomatoes
- 1 garlic clove minced
- 1 jalapeno diced (seeded if you can't handle the heat!)
- 1 Tbs fresh cilantro chopped
- salt and pepper to taste
For the Guacamole
- 2 large avocados
- 1 Tbs salsa
- salt and pepper to taste
Instructions
For the Salsa
- Combine all the salsa ingredients in a food processor or blender. blend until at the desired consistency (I make sure all my ingredients are combined...no chunks).
For the Guacamole
- Remove pit and skin from avocados and place in a medium bowl.
- Mash avocado with a potato masher or use a hand mixer (I use a hand mixer to make it really smooth).
- Stir in salsa and salt and pepper.
- Keep refrigerated until ready to serve.

I made a quick party display with some Back to school printables that you can download for FREE! It includes a banner, 2″ toppers, small labels and food tent cards. I used EK brand flourish hole punches for the toppers and small labels. You can easily use rounded or just cut them into squares instead. The chalkboard backgrounds and fun colors just scream “Back to School!”

I HATE HATE HATE onions. I know…a crime against New Mexico. So, that is one of my major problems with everyone else’s guac. I like to put lime wedges out whenever we eat tacos because I like the consistency of the guacamole like this 🙂
