This recipe is a real winner…so be warned that when you make this once…you WILL crave it again.
I love Mexican food. I grew up in New Mexico and I love all things with meat, beans, cheese, and sour cream….which are the ingredients that ALL Mexican food meals have. I also love Nacho cheese…but I have a real problem buying the gallon sized processed cheese from Costco, and I have an even bigger problem buying the $8 “I can eat this in two seconds” cheese dip. So, to say I was ecstatic when I found a nacho cheese recipe would be an understatement. I had to make some adjustments to the cheese to fit our tastes. I also made my own “chips” out of baked flour tortillas…because a) I HATE frying things, b) they’re delicious this way, and c) I feel better about feeding them to my family!
